A “Favorite” to take to a covered dish dinner

In the South, we are famous for getting together for all sorts of reasons. One of the main “excuses” is that we eat! During the summer many of us have cookouts in the backyard with friends. There are Sunday school class meetings, book club meetings, garden club meetings, small groups that like to travel together, birthdays and a multitude of reasons to socialize…and to eat!

I don’t know any one who doesn’t enjoy fellowship and food. After I moved back to South Carolina, the Telephone Pioneer retirees had a monthly meeting at the Company Headquarters building in Columbia. At that time there was a museum filled with artifacts from the past, which was very interesting. The Pioneers had a special room where we gathered to work on projects, such as making dolls to donate to the a Police Department in case a child was brought in for some reason and a stuffed doll or animal was used to calm the child. There were many projects throughout the year, but one thing remained the same….a covered dish lunch.

There was a kitchen in the large room, so that dishes which needed to be served warm could be heated or maybe brown and serve rolls could be baked. As in every group, there were certain ladies who always brought the same thing, because it was her “specialty.”

I fondly remember that one lady, who loved to bake would bring not one, but two delicious cakes! Someone else might make deviled eggs better than anyone else or baked beans with a certain taste. Whatever the dish was, when they were put together, we had a feast.

Quite often I would take corn pudding. It was so simple to prepare and folks seemed to like it. After a while, you were expected to bring it. I miss those days of fellowship and food! As time goes by, things change, the group gets smaller and before long there are only a few “old timers” remaining and the luncheons are no longer held.Very sad, but it does happen.

I bought some fresh corn this week, which was delicious. Then I thought of the simple casserole dish I used to make with Jiffy mix , two kinds of corn and sour cream. There was never any left in the dish to bring home, so our group really enjoyed it.

I checked on Facebook and the Jiffy Company has a recipe with pictures of this “favorite” dish. I will post that along with this “journal entry,” so that those who want it can have it. You cannot beat good food and fellowship! In case you have never tried it, you should give it a try, then you may be taking it as “your” dish to your next luncheon.
